It's a must have dishes for Hari Raya Aidil Fitri in Malaysia. It usually accompanies Nasi Impit (ketupat) or sometimes served with rice or noodle. And here is Serunding Ayam recipe:
1 Whole Chicken
5 pcs of shallot
2 pcs 0f garlic crushed
1/2 tsp Shrimp paste (belacan)
500 ml Thick Coconut Milk
1 pc lemon grass
2 pcs dry chilli (boiled and pounded)(optional)
Chicken cube maggi
s/p
seasoning(optional)
Method:
1. cut chicken into 4 parts and boil with coconut milk and lemon grass.
2. cool the chicken and shred into small strips.
3. put back the shredded chicken into the coconut milk, boil it, this time adding shallot, garlic, dry chillies, s/p, seasoning and chicken cube.
4. stir until it dries up.
5. enjoy the serunding Ayam.
